Yesterday was National Gardening Day, so I couldn’t miss that wonderful opportunity to share another wonderful gardening book review and giveaway with you today. You know I love growing flowers and herbs, but for the last few years, I’ve been wanting to grow more edibles and have Googled How to grow ornamental and edible plants together many times over the last year or so, so imagine my delight when I received the opportunity to review garden designer Linda Vater’s newest book that teaches us how to pull this gardening style off. Around this time each year, my husband and daughters start asking for gift ideas for Mother’s Day. Each year I might give them hints, but I don’t come right out and tell them to buy me something, because I want to be surprised! Happy Earth day! Over the years, I’ve written several blog posts to share how my family honors our earth by showcasing what we are planting or events we’ll be attending. There are many resources available on the EarthDay.org site and I hope you’ll visit and find a way to plug in and help where you are. This year, I’m focusing on shining a light of food resources and farms that are doing their part to help stop food scarcity. Food and water, two resources most of us in America; especially in suburbia, take for granted. I know that I do. Turning on the tap for clean water, or opening my pantry for food is something I’m so accustomed to doing; I’ve become spoiled. Sure, my family and I give to our local food pantries, Goodwill store, and local shelter and we do our best not to waste water by turning off taps and conserving water when gardening, but there is so much more we can and should do to help protect our natural resources and help end hunger. Our schedules have been fairly non-stop this month with both of our daughter’s graduating from either middle or high school. When we do get to spend time together at home, one of our favorite ways to spend family time is watching movies.

My daughters and I are in the midst of planning their graduation parties. In May, my oldest will graduate from high school and my youngest will graduate from middle school. While both are causes for celebration on their own, my girls have decided to have a combo BBQ/Bonfire with both sets of their friends. That means cooking good food and lots of it, but we don't mind that.  You can’t have a BBQ without serving salads, so I’m going to make this tasty no mayo potato salad recipe I’ve been perfecting for a decade. I think you are going to like my pan seared potato, bacon and green onion salad as much as we do!

I can’t tell you how happy I am that my first blog post of 2017 is one that aligns with my desire to become more active and healthy this year. I don’t make resolutions; I make plans and set goals to better myself so I can be my best self for my family, friends and business partners. In order for me to make these positive changes, I needed to start with my breakfast habits and go from there. Hello from Tennessee Titans territory! Are you ready for some football this Sunday? We are heading into week six of seventeen and our Titans are starting to come together after a nice win last weekend!I thought it was a good time to show our team some love and share this great recipe my husband I came up with for the super bowl last year. Our hearty buffalo blue cheese dip is our take on the classic entrée, it’s a dip that eats like a meal and is easier to clean up after.

Doesn't this look tasty? Here's what you'll need to add to your shopping list: 


Ingredients:

 Makes 3 cups

  • 1 Large can of Chicken Breast meat in water
  • ¾ jar  Blue Cheese Dressing
  • 2 tablespoons (or more to taste) Cayenne based Hot sauce (think Tabasco®, Franks® or Texas Pete®)
  • 1 cup celery, diced small (reserve celery greens for garnish)
  • 1 package Neufchatel Cheese or softened Cream cheese




Hearty Buffalo Blue cheese dip recipe




Directions:

In large mixing bowl, mix all ingredients together until Chicken breast meat is broken apart and ingredients mixed in.
Garnish with celery greens and chill for at least an hour before serving.
Serve with your favorite chips, crackers, carrots, celery sticks or any dip-able veggie.

My husband loves this dip best with big dipper corn chips and celery sticks. He’s requested it for this week’s game and since it takes just 5 ingredients and about 10 minutes to make, I’m happy to oblige his request! Another great thing about this recipe is it is easy to double, or even triple the serving amount to feed a crowd!


Whether you watch the game from home, or are heading out to do some tailgating, try making and serving our Hearty Buffalo Blue Cheese Dip. It really is perfect football fan food!

If you’ve read my blog for long, you know I’m a fan of family dinners and tasty snacks. I try to plan out my meals for the week well ahead of time, so when I saw that Old El Paso dinner kits and Avocados from Mexico were on sale at Publix, inspiration struck and I knew I’d be serving tacos on game day. Not only would I be saving money with the dinner kits being BOGO’s, I could stock up on the best tasting Avocados in town. That is a budget touchdown!

Once I told my husband and kids that I planned on serving tacos, they chimed it with helpful ideas and the meal grew from there with everybody pitching in. My girls have helped me with making guacamole and sides before, so we started there. Avocados from Mexico make the best tasting, creamiest guac! I served mine with blue corn chips for a fun pop of color.

The delicious Poblano Avocado soup my husband made is a true labor of love! I’m going to be sharing a fall soup recipe round up next month and will be sure to share his recipe. 

After we’d all snacked on the chips and guacamole, I got started on my Pollo Verde Chicken, which really is easy to make once you’ve assembled all your ingredients.

Ingredients:
Serves 6

  • 2- pounds chicken breasts
  • 2- 10 oz. cans Old El Paso Mild Green Enchilada Sauce  
  • 1- 4.5 oz. can Old El Paso mild green chilies
  • 2- small gloves garlic
  • ½ large yellow onion
  • ½ cup water
  • 1- tablespoon Canola oil
  • Salt/Pepper to taste
  • 10- Old El Paso soft taco size tortilla’s (from soft taco dinner kit).
  • Red Taco Sauce (from soft taco kit).
  • Cilantro for garnish

Pollo Verde tacos taste fantastic served on warmed corn tortillas’ as well.


Directions:

In lightly oiled frying pan, sear chicken breasts on both sides to just light brown color. Season chicken with salt and pepper prior to turning. 

Reduce heat and continue to cook chicken breasts, until no longer pink, about 20 minutes depending on thickness of breasts. While chicken is cooking, chop garlic and onion. 

Once juices run clear from chicken breasts, pull from pan and place on cutting board. 

Next, saute garlic and onions in chicken pan until lightly brown, making sure to scrape up any chicken happies' left on the bottom of the pan. 

Cut or pull apart chicken breast meat and add back to pan. Add green chilies and enchilada sauce. 

Bring to a low boil and then reduce heat and simmer for about 15 minutes.  Place tortillas in oven to warm for 5 minutes. 

Serve your tacos buffet style, with refried beans, making sure there is lots of cilantro, limes, onions, sour cream and guacamole condiments available. Enjoy!
