February has finally arrived, which is cause for celebration for so many of us.  There is just so much to look forward to and celebrate this month. For those fortunate enough to live in warmer regions, you may start feeling the call of spring by the end of this month. Then there’s love to celebrate in its many forms on Valentine’s Day and a whole new line up of drivers will be greeting us at  Nascar's Daytona 500 on the 18th. Today though, we are talking about appetizers for the BIG GAME! Are you ready for some football this Sunday? Here are some tasty crowd-pleasing Jalapeno Cheddar Bacon wafers we whipped up recently that are a perfect game day appetizer.

These yummy wafers came about when my husband and I started looking through recipes for this year’s super bowl dinner. Whether we host or not, we always cook up lots of tasty food too much on throughout the day.  We found a couple recipes and decided to take a little inspiration from both and make our own game day munchie. 



Jalapeno Cheddar Bacon wafers Ingredients:


Jalapeno Cheddar Bacon wafers Ingredients

Makes 40

  • 3 oz. bag real Bacon Bits
  • 1 medium Jalapeno seeded and diced
  • 8 tablespoons Butter
  • 1 ½ cup All-Purpose Flour
  • 2 cups Shredded Sharp Cheddar cheese
  • Pinch of salt


Directions: 


In a large mixing bowl, add butter to flour, fold in. Mix all other ingredients in the bowl.
Pour dough onto large piece of plastic wrap and gently form a roll (like cookie dough).
Refrigerate for 45 minutes to an hour.
Preheat oven to 375 5 minutes before pulling dough from refrigerator.
Line cookie sheet with parchment paper, or lightly oil it.
Slice dough into thin wafers and place on cookie sheet.
Bake 8-10 minutes, or until golden brown.
Let wafers cool, then serve and enjoy!

These wafers are so flavorful, you can eat them warm straight for the platter, or eat them at room temperature.  Since they are hardy you can serve them with dips, pimento cheese or other cheese spreads, or even toss them on top of a bowl of chili or chowder. They are so versatile and best of all, our kids love them too! 

Another great thing about these Jalapeno Cheddar Bacon Wafers besides being easy to make is you may have all or most of the ingredients on hand and will use the ingredients in other dishes saving you money and time at the grocery store. 


Sunday-Funday!

While I love watching a good football game and it doesn’t get much better than the Super Bowl, I also love the commercials, half-time performances, and the puppy bowl! It's been a tradition with our girls that we pick a puppy or two to root for every year.
