Once I’ve served Thanksgiving leftovers at least twice, I feel comfortable turning my attention to all things Christmas and that means decorating and baking cookies! I love baking from scratch whenever I can, but sometimes this busy work at home Mom needs to streamline the baking process and that’s when I turn to Betty Crocker Cookie mixes. This week, I’m spreading holiday cheer with my Peanut Butter Toffee Cookies that started with a Betty Crocker mix. These cookies are so quick and delicious; nobody will believe they aren’t from scratch!

I bake cookies often throughout the year, but at Christmas time, I’m baking like a boss all season long. I bake for family and friends, I bake for cookie swaps and teacher   appreciation days at my daughters’ schools and I bake cookies to give to my neighbors.

It really is a simple and easy way to spread kindness and cheer at this special time of year. All you need is a Betty Crocker Cookie Mix, about an hour and a few Ziploc containers to put your cookies in.  I chose peanut butter because I knew it was a favorite ; but Betty Crocker has plenty of options like Sugar Cookies, Chocolate Chip and Double Chocolate chip just to name a few.  Both the mixes and the Ziploc containers are on sale right now at Publix, so be sure to visit readysetsave.com to download your digital coupons. Be sure to check out all the fun holiday recipes there too!

Here’s my quick and easy recipe for Peanut Butter Toffee Cookies.

Simple ingredients to make Peanut Butter Toffee Cookies

Ingredients:

  • 1) 17.5 ounce Betty Crocker Peanut Butter Cookie Mix
  • 1) 8 ounce bag English toffee bits (found in baking aisle of most grocery stores)
  • 3) Tablespoons vegetable oil
  • 2) Tablespoons water
  • 1) Large egg

Directions:

  • Preheat oven to 375 degrees and line cookie sheets with parchment paper. In large bowl mix oil, water and egg in Peanut Butter cookie batter until no longer grainy.
  • Gently fold in toffee bits.
  • Shape dough into 36 small balls or make drop cookies like I did by gently sliding off tablespoon size dough balls on to parchment paper.
  • Bake cookies for 8-10 minutes for regular size cookies or 9-11 minutes for large cookies.
  • Allow to cool.

If you are giving cookies as gifts like I am, while the cookies cool, it’s time to get your cookie container ready. I prefer using Ziploc containers because they are sturdy and reusable, which truly comes in handy this time of year! Sometimes,  I even receive my container back with a goody inside as thanks.

Put baked cookies in a Ziploc container for sharing

I’ve found that a dozen cookies fit perfectly in the 1.25 quart size Ziploc containers. Sometimes you can get lucky and find the holiday containers, but if not, you can decorate your container as festively as you want.

Happy belated National Cookie Day! I hope you enjoyed baking and eating a variety of cookies yesterday, just like I did. Since we are in the beginning of the holiday baking season, I thought I’d try my hand at making some gluten-free cookies for my family and friends who need this option. While these cookies are semi-homemade; I was delighted with the way they turned out and so was my family. They couldn’t wait to try them when they got home since the heavenly scent of fresh baked treats greeted them at the door.

I’ve been making this no-egg drop cookie recipe for almost twenty years, so it's become a family favorite. I like to use dark chocolate chips this time of year to make the cookies extra special for my Valentine’s Day Sweethearts. I’m sharing the recipe with you today so you can bake up a batch without ever touching precious egg supplies.

Dark Chocolate Chip Cookies To Delight Your Sweethearts!

No Egg Chocolate Chip Cookie Dough

We’ve made it through September! A month I usually love and view as the kickoff to all things Autumn, but Mother Nature had other plans. The Metro Nashville area broke records, but not in a good way. After August’s searing heatwave, we then had the second-hottest September on record and the first-ever September with no rain. Thankfully, it’s cooled down a bit, and I can actually turn on the oven without guilt. Just in time for this special day.

It’s National Homemade Cookies Day!

Are there NFL football fans in your family? My husband and I are fans of the game and always root on the home team, which for us is the Tennessee Titans. Our Titans did so well this year, that it was a sad moment when we lost last Sunday’s game. At least we have the Superbowl on February 7th to look forward to. We’ll be tuning in to and partaking in all the game day fun even if our team isn’t playing. To us, and most fans, it’s just not game day if you don’t have food and snacks! Thanks to today’s sponsor, Sugar Plum Chocolates, I’ll be serving up gourmet nuts and cookies which make perfect game day snacks.

Are you living GF? Or, do you have a loved one or friend who follows a gluten-free diet? If so, you may already know that May is National Celiac Awareness Month. I was recently asked if I’d like to help raise awareness and show support for those living with celiac disease and gluten intolerance by sharing a brand that offers certified gluten-free products.

Kroger helping me by a Lunchbox Hero

Disclosure: I received the products mentioned below for free along with coupons to hand out via BzzAgent sponsored by Kroger. I received no monetary compensation. All opinions are my own. Thank you to our sponsor, Kroger.

School has started all over the America now so that means Moms and Dads are shopping for healthy, affordable and good tasting lunch items.  It doesn’t take long for our kids to become bored with everyday lunch fare, so we need to mix things up and Kroger’s products help make it super easy to be a Lunchbox Hero.

MyWAHMPlan
Yummy snacks from Kroger

Recently, I received coupons for all these lunchbox goodies. The girls got to select flavors and varieties of these products to review :

  • Kroger Extreme Fusion Waters
  • Kroger Brand Cookies
  • Kroger Snack Pretzels
  • Kroger Fruit Snacks
  • Kroger Chewy Granola Bars

Our Reviews:

Kroger Extreme Fusion Waters- The girls chose Tropical Punch and loved it! They said the tasted better than our regular brand. They said you can really taste the banana in these.  I was happy they have 25% less sugar and no artificial flavors and you can’t beat the price! $1.99 per 10 pack.

Kroger Brand Cookies- The girls chose original Chocolate Chip cookies.  Store bought cookies usually play second fiddle to my baked goods, but we were all game to try these cookies and they were surprisingly good! Sometimes packages cookies taste stale or bland and while you know you aren’t eating a homemade cookie, these chocolate chips were a hit. If I don’t have time to bake, I will purchase these cookies again because the price is right at $2.99.

Kroger Snack Pretzels- Next up is Kroger’s snack size cheese-flavored peanut butter filled pretzels. That’s a mouthful I thought as we put these in the shopping cart and I wondered if there might a little too much flavors going on and for me, yes there was. I could eat them if they were cheese or peanut butter, but not both. However, I am the only one in my family who though that.
The girls loved them and though they were super tasty, but it was my husband who asked that I keep these in the house for when the munchies strike. These come in single serving bags for $1.29 making them a perfect for lunchboxes.

Kroger Fruit Snacks- Shapes won out over Stars & Moons on this product. I will tell you honestly, my youngest daughter is HARD to please when it comes to fruit snacks. She has rejected many a box of fruit snacks, so I wasn’t sure how she react to these. But, amazingly enough, both daughters loved these! Kroger’s fruit snacks are made with real fruit and vegetable juices, so I can feel good about putting them in their lunchboxes. Plus, they are only $1.00 for a box of six and the bags hold a lot of pieces! One bad had 16 snacks in it. Plenty for your kids to share or trade with friends.

Kroger Chewy Granola Bars- Chocolate chip won again, but I figured they would because these granola bars have been a favorite around our house for a while.  My girls say they taste like a cookie.  We all enjoy the fresh tasting quality of Kroger Granola bars and recommend them for your family.

Kroger receives an A+ from us on their lunch box products and their prices.  Not a Kroger shopper? Look for these Lunchbox Hero products in your area at these Kroger-owned stores: Ralphs, Smiths or Fred Meyers.

So now that you’ve got some lunchbox food ideas, what else can we parents do to send a little love from home with our kids? Here are a few ideas.

Sending Love:

MyWAHMPlan

Keep your kids guessing- Put a mystery bag in your child’s lunchbox every day. They can’t look inside until it’s time to eat. Put in a new fruit or veggie for them to try. * Perfect for Pre-K and Elementary school kids.*

Give Food a Facelift- Use cookie cutters or a knife to take sandwiches from snoreville to coolness quickly and easily.  *Perfect for kids of all grade levels.*

Wrap it Up- Kids get so bored with sandwiches, so switch up those tired PB&J’s with a wrap.  Grab some whole gain or plain tortillas and spread thin layers of peanut butter and jelly, roll like a burrito, pinch the ends closed so you don’t have leaks. My girl’s love Peanut butter and Apple jelly wraps.

Leftovers are your friend- My kids LOVE left over day. Yesterday I sent them a burrito with the leftovers from dinner the night before. I had leftover chicken one night so I sent in grilled chicken salads.

Still send love without the love note- Once your kids get to middle and high school, you have to stop sending in love notes. Sad, but true Moms and Dads! So, do the next best thing. Decorate their Ziploc baggies with a silly smiley face, or your “text” code to wish them luck on their tests, put X’s and O’s along one side of the baggie.

I hope you found the review and lunchbox tips helpful. Tell me in the comments, what do you enjoy making or adding to your kids lunchboxes?

  Dark Chocolate Chip Cookies

Baking season is in full swing at our house and as December elbowed out November, I pulled out this tried and true drop cookie recipe. I clipped this from the local Williamson County Parent magazine in 2005.
You are going to love these simple, yummy cookies! Our plate didn't look like that for long.
The very best part is this is a no egg recipe so your kiddies~ and you can eat the dough!
Stir up a batch of fun and happy memories today with your family. Enjoy!

The Basic Chocolate Chip Drop Cookie

Yield: 3 to 5 dozen, depending on cookie size
Prep Time: 5 minutes
Cooking Time: 9 to 11 minutes (longer with larger cookies)

Ingredients:

·         2 cups (1 12-ounce bag) chocolate chips
·         2 sticks butter, margarine or shortening, softened
·         1 ½  cups sugar (or brown sugar or both blended)
·         3 tablespoons water
·         3 tablespoons oil
·         2 teaspoons vanilla
·         2 ¼ cups flour
·         2 teaspoons baking powder
·         1 teaspoon baking soda
·         1 teaspoon salt

Directions:

1.       Preheat oven to 375°.
2.       In large mixer bowl, beat margarine and sugar until creamy.
3.       Beat in water, oil, and vanilla.
4.       Stir together dry ingredients, gradually add to sugar mixture.
5.        Drop dough by rounded spoonfuls onto ungreased cookie sheets.
6.       Bake at 375° for 9 to 11 minutes, until golden.
7.       Leave on cookie sheets for a few minutes, then transfer to cooling racks. Store in an airtight container.

I've also baked up a few dozen Old Fashioned Oatmeal Raisin Cookies which turned out really well I think in large part because I used dark brown sugar.

What is your favorite cookie recipe? Please share!
Labor day is drawing ever closer and my home and garden magazines are chock full of delightful “fall” desserts, tempting me to bake pies and breads and cookies! Tempting as all those recipes are, it’s still too hot for me to consider having my oven on for more than a quick broil here and there, so I was thrilled when asked to try out the latest THINaddictives cookies from Nonni’s. We got to indulge our sweet tooth with dark chocolate almond thins when I received a complimentary  box of items from Nonni’s who did the baking for us.  If it’s still too hot for you to bake sweet treats as well, then this giveaway is for you! All opinions expressed are my own.

About Nonni’s Dark Chocolate Almond THINaddictives:

Made for dark chocolate lovers wanting a guilt-free treat, each cookie is lightly drizzled with real, dark chocolate.

Nonni's dark chocolate almond THINaddictives #snacks

Nonni’s new line of THINaddictives comes in three tasty flavors:

Dark Chocolate Almond Banana:

My daughters liked these best, noting they could tell these were made with real bananas and the dark chocolate drizzle had just the right amount of sweetness.

Double Dark Chocolate Almond:

These were my favorite, which came as no surprise to anyone! I love dark chocolate and almonds! I love that I could see and taste the chunks of almonds.

Dark Chocolate Cherry Almond:

These were my husband’s favorite, with good reason. The flavor profile is subtle, yet very tasty. He wants to pair them with some cream cheese and grapes.

I served each flavor of Dark Chocolate Almond THINaddictives with fruit for and afternoon snack and found it a delightful flavor combination!

Peaches and dark chocolate almond cookie thins

I can feel good about my family enjoying these since each treats average 70 to 80 calories and come in pre-portioned freshness packs with two almond thins each, making it the perfect on the go snack for busy families!

I invite you to learn more about the Nonni’s brand by getting social with them. As a small business owner, I’m always intrigued by the family behind the brand.
