By August, our family meal plans have fizzled and we all are getting a bit bored with the same dinner fare. That’s why last week, I decided to go old school and serve up tasty tacos on, you guessed it! Tuesday- much to the delight of my family! If your summer dinner routine has hit a snag, maybe it’s time to bring back Taco Tuesday and delight your family too.

I wanted to keep dinner a surprise, so I headed to Publix by myself with the intention of buying the ingredients for good old fashioned beef and bean tacos. That’s when I noticed the Stand ‘n Stuff Taco shells dinner kit right beside their refried beans and green chilies that I normally buy. I knew these stand-alone shells would be a big hit with my girls, so in the cart they went, along with some avocados for guacamole.

As soon as I got home, I started making some guacamole with these beautiful avocados. I’m fortunate that my family loves the taste of this fruit! Of course we aren’t alone- did you know that Americans eat 1.4 billion pounds of guacamole a year?! Yeah, I was pretty blown away by that number myself.


I keep my guacamole recipe really simple and easy to follow by using ingredients and spices I have on hand like ground garlic, cumin, Adobo and fresh squeezed lime juice. I’ve found it I stick to this recipe, the guacamole will get gobbled up and used for more than just chip dipping,  We spread it on sandwiches, dip our carrots and peppers and more.

Avocados do ripen really quickly, so I used all 5 of mine in this batch of guacamole. If your family won’t eat that much, you can store uncut avocados in the frig for a few days, or slice them and squeeze fresh lemon or lime juice on them to keep the avocado from browning. With the Old El Paso dinner kit that has shells, meat seasonings and taco sauce, my Taco Tuesday dinner was done in a flash. Besides cheese and sour cream, I make sure I serve tacos with lots of veggies- romaine lettuce, black olives, tomatoes, peppers, and more guacamole to help them be a bit healthier. 

When my family came to the dinner table, they couldn’t have been more surprised and delighted that I was serving tacos on Tuesday again. And the crunchy, easy to use stand n stuff shells were a huge hit!

With summer in full swing, I serve a lot of iced tea to my family and friends. Nothing is worse than going to the frig and seeing that my iced tea pitcher is almost empty again. That’s why I was thrilled to be selected to receive a complimentary box of TAZO tea blends, #NewWayToTea via Smiley 360 to try and share my thoughts with you.

Iced tea lovers rejoice! There’s a simple way to get flavorful iced tea quickly. I was drawn to TAZO iced citrus bliss herbal tea bags on my recent shopping trip. This tea is described as an herbal infusion with beckoning notes of citrus, passion fruit & hibiscus.

Making this beautifully fragrant herbal iced tea couldn’t be easier! Just boil 32 ounces of water to a boil. Pour boiling water over the filter bag in a 64 oz. pitcher, let steep for 5 minutes, and then pour another 32 ounces of cold water in. Serve chilled and iced.  I add a half cup of sugar, but next pitcher, I think I can get away with just a quarter cup sugar, this tea tastes so good!

If you like iced tea and lemonade together, this is your herbal tea! Just switch out the last 32 ounces of cold water with cold lemonade and enjoy!

The first order of business was to visit LibertĂ©® MĂ©diterranĂ©e #YogurtPerfection to learn more about this brand. The delightful sounding names on their yogurts had my mouth watering! Their new flavors include:

LibertĂ©® MĂ©diterranĂ©e says their #YogurtPefection is a luscious whole milk yogurt, with live active cultures, real fruit and no gelatin, sugar substitutes or preservatives. That really does sound like yogurt perfection so I can see why they use that hashtag.


Once at Publix, I found the hardest part of the trip was picking a flavor for my dessert recipe. I stood there in the yogurt isle for quite some time while different recipe ideas popped into my mind with each new flavor I picked up. I finally chose the Méditerranée Lemon!

All that lemon goodness i could see at the bottom of the container and their description-  Whole milk yogurt enlivened with the sharpness of lemon. Bracing but silky , had me longing to try it and dreaming of a warm weather treats, like Orange Crème bars! Armed with my yogurt and a perfect dessert idea, I completed my shopping at Publix, easily finding all the ingredients I needed since there are only 4!

This recipe is super quick and easy to make, you’ll have dessert ready in no time. Here’s what you’ll need to make Lemon Yogurt Mandarin Orange Shortcake Dessert


Ingredients:

Serves 4-6

  • 1- container LibertĂ©® MĂ©diterranĂ©e Lemon yogurt
  • 1- container of shortcake dessert shells
  • 1- container Lite whipped topping
  • 1- 15 oz. can Mandarin Orange Segments in light syrup


Directions:

  • Spoon stirred container LibertĂ©® MĂ©diterranĂ©e Lemon yogurt into large mixing bowl
  • Drain the can of Mandarin Orange Segments reserving syrup and 4-6 Mandarin Orange Segments, pour in mixing bowl
  • Add two heaping tablespoons of Lite whipped topping
  • Gently stir all ingredients until well mixed

  • Place 1 shortcake dessert shell on a dessert plate and fill with Lemon Yogurt Orange filling
  • Top with a small dollop of Lite whipped topping
  • Add one Mandarin Orange Segment to top of dessert and drizzle a teaspoon of Mandarin Orange syrup on dessert
  • Serve chilled

Yoplait Greek 100 Whips disclosure

Spring  has finally arrived and warmer days are on the way! Warm weather here means spending more time outside and a switch to lighter, healthier eating, including desserts. I recently tried Yoplait Greek100 Whips! yogurt in strawberry and I loved it! 


I knew immediately what warm weather dessert I was going to make over; my Strawberry Trifle. My old recipe called for lots of sugar on the strawberries and lots of whipped cream too, but I’m lightening up for my health and my families and I’d love to share my easy recipe with you.

Ingredients:

Makes 4 6 oz. Trifles
  • 2 Strawberry Yoplait Greek 100 Whips
  • 2 Vanilla Cupcake Yoplait Greek 100 Whips
  • 1 quart fresh strawberries
  • 1 Fat-Free Angel Food Cake


Directions:

  • Wash strawberries in a colander allowing them to air dry if possible.
  • Dry strawberries if needed and slice, set aside.
  • Chop up Angel Food cake into bite size pieces, place in bowl, set aside.
  • Open Strawberry Yoplait Greek 100 Whips!, stir to whip.

Assembling Trifles:

  • Add a hand full of Angel Food cake to the bottom of each serving cup/bowl.
  • Add a hefty teaspoon of Strawberry Yoplait Greek 100 Whips.
  • Add a hefty tablespoon of sliced strawberries.
  • Add another handful of Angel Food cake.
  • Top with a hefty teaspoon of Vanilla Cupcake Yoplait Greek 100 Whips.
  • Garnish top with sliced strawberries.

Serve immediately, or cover with cling wrap and refrigerate until ready to serve.

My husband and I were excited to see if these rice vinegar's tasted as good as they looked, so we held an informal taste test in our kitchen. With spoons in hand we sampled them right from the bottle. 


Our Thoughts:

All six flavors are pleasant tasting, not harsh or acid. As you can probably tell by their color, they are very light in flavor. Yes, they are still vinegar's, so you have to be a fan of that flavor profile; but these seasoned rice vinegar's were quite tasty straight from the bottle. Our favorites were the Citrus, Mango and Basil and Oregano.

I especially enjoyed the Basil and Oregano.  It has just the right amount of herb flavors, with a hint of brown sugar sweetness that I found to be a perfect replacement of my regular low-calorie salad dressing.

I whipped up this quick spinach, olive and Parmesan cheese salad for lunch and it was delicious when paired with the Basil & Oregano rice vinegar and just a splash of olive oil!

Some other tasty ways to use these rice vinegar's are:

  • Splashing on grilled chicken
  • Replacing Mayo in potato salad
  • Dip for Onion rings
  • Adding a splash to snacks like trail mix

Superfood Trail Mix:

Ingredients:
Makes 2 cups

1 tablespoon NAKANO Natural Rice Vinegar
1 tablespoon honey
1/8 teaspoon sea salt
Dash cayenne pepper (optional)
1 teaspoon coconut oil
1/2 cup raw almonds, chopped
1 tablespoon chia seeds
1 cup puffed brown rice cereal
1/4 cup pumpkin seeds
1/4 cup raisins


Directions:

In a small bowl, mix NAKANO Natural Rice Vinegar, honey, salt and cayenne. In a 10-inch skillet over medium-low heat, warm oil and add the vinegar mix, almonds and chia seeds. 

Cook for 6 minutes, stirring constantly, until all excess liquid is gone. Pour onto a parchment paper-lined baking sheet and let cool in the refrigerator for 15 minutes to set. Toss almonds with brown rice cereal, pumpkin seeds, and raisins.

Nutrition:  (1/4 cup): 110 calories, 6g total fat, 1g saturated fat, 0g cholesterol, 60mg sodium, 12g carbs, 2g fiber, 6g sugar, 3g protein

This recipe was inspired by the notion of always having a plan B dinner on hand for those nights when life throws you a curve-ball. Thanks to Publix, it’s super easy to plan ahead and make this tasty recipe! Your family won’t believe you got this meal on the table in under an hour! 




Cheesy Chicken Pasta Bake #recipe on MyWAHMPlan.com


Cheesy Chicken Pasta Bake – serves 8


Ingredients:

1 – 18 oz. can Progresso Creamy Mushroom Soup
1- 14.5 oz. can Hunts Fire Roasted Diced Tomatoes w/ Garlic
2- 10 oz. can Chicken Breast Meat in water
1 box Rigatoni or pasta of your choice, raid your pantry!
1 cup Kraft 6 cheese Italian blend shredded cheese
3/4 cup Kraft shredded Parmesan cheese
2- tablespoons Canola or other cooking oil (for casserole dish and pasta water)
¼ cup water (I use pasta water)
Salt, pepper Italian style dried herbs to taste.


Directions:

Boil pasta to al dente as per box directions. About nine minutes.
Preheat oven to 350° F
Grease casserole dish.
Using a spider or slotted spoon, pull al dente pasta from water and spread evenly in casserole dish.
Add salt, pepper and Italian style dried herbs to pasta.
Add ¼ cup pasta water.
Mix in seasonings.
Next, add all canned ingredients starting with creamy mushroom soup, then tomatoes, then chicken and mix.
Add the Kraft 6 cheese Italian blend shredded cheese, and lightly fold in to casserole.
Top with Kraft Parmesan cheese.
Bake in preheated oven for 20-25 minutes or until cheese is bubbling.

Dinner is served!

Serve with a garden salad and Pillsbury French bread loaf, which can be cooked at the same oven temperature as the Cheesy Chicken Pasta Bake. Serve Betty Crocker Double Chocolate Chunk cookies for dessert, if time allows you to bake them ahead of time.  Enjoy!
