We fell asleep last night to the gently falling snow and awoke to a bright and snowy scene. There wasn’t enough snow to build a proper snow man, but my girls still had to get out there and play in the rare treat that is snow in middle Tennessee.  Soon enough, the magic wore off and in they came, changed their clothes and then announced they were hungry and bored.

What’s a mom to do? I whipped out the box of Pop Secret popcorn and suggested we make a pillow fort like we used too when they were younger. My teen and tween looked at each other and happily agreed.

First, we decided to make a snack worthy of a princess day, so we invented Chocolate-Caramel Princess crunch! This is super easy to make and you may already have the 3 ingredients on hand. 



Ingredients:

  • 1 bag of regular buttered flavor Pop Secret Popcorn
  • 1 squeeze bottle of chocolate syrup
  • 1 squeeze bottle of caramel syrup


Directions:

Microwave the Pop Secret popcorn according to directions. Place in large bowl and allow to cool until it no longer steams.

Now, let your kids have fun adding as much of the syrups they want to make their own special version of Chocolate-Caramel Princess crunch! Of course, you’ll want to change the name if you have boys. The point is to have fun with this and let the kids sneak bites...

and be as loud and as messy as they want. In other words- let you kids be kids! Thankfully, my girls who are a bit older now, decided not to go too overboard with the syrups.

We all had such a good time making this easy, yet tasty treat. Even this older princess thoroughly enjoyed letting loose and laughing and eating with them.

This super yummy creation was way to hard to resist. You have to try it if you love sweet and salty treats!

This sheet has served as our fort door and roof for a lot of years, so it was fun getting it back out of the linen closet and borrowing clamps from their Daddy. The girls and I added lots of soft, comfy blankets and pillows and transformed a corner of our living room into princess headquarters; complete with their Pop Secret Chocolate-Caramel Princess crunch!

The girls had so much fun in their fort, they asked if it could stay up all weekend- just like when they were little and I happily agreed.

Sunday Roast Chicken Recipe

In a recent post featuring my new Roaster pan, I said I would share this recipe and I’m happy I’ve found time to today. Maybe it will inspire your Sunday meal plans. Speaking of inspired, my take on this recipe came after I was flipping through an old Bon Appetit magazine. We didn’t have most of their ingredients, but that didn’t stop us! We used what we had on hand and loved the results. Feel free to add your own flair and substitute ingredients as needed.


Sunday Roast Chicken #recipe #homecooked meals


Sunday Roast Chicken – serves 4


Ingredients:

  • 8-10) small red potatoes- well scrubbed and pierced with knife to allow steaming during cooking.
  • 2-4) medium Parsnips- well scrubbed, quartered lengthwise.  
  • 5-6) medium carrots- well scrubbed, quartered lengthwise.  
  • 1-2) medium onions- peeled, quartered.
  • 5-6) Creamini Mushrooms, washed, dried.
  • 2) tablespoons cooking oil of choice to coat pan and rack.
  • 3) tablespoons unsalted butter, room temperature.
  • 2) tablespoons finely chopped fresh sage or 1 tablespoon dried sage.
  • 7) sprigs fresh Rosemary, dried.
  • 1) 4-5 pound whole organic (if possible) chicken- patted dry.
  • 1 tablespoon kosher salt or salt of choice (we used fresh ground pink Himalayan rock salt).
  • 1 tablespoon dried Sage.
  • ¼ teaspoon ground dried Thyme.
  • ¼ teaspoon ground dried Marjoram.
  • ¼ cup water or dry white wine.

Directions:

  • Preheat oven to 400° F
  • Layer bottom of rack with sprigs of fresh Rosemary if desired. Layer cut vegetables on rack.
  • (insert veggie rack pic)
  • Pour ¼ cup water in bottom of roaster.
  • Place chicken in center of vegetables.
  • Mix butter and sage together in small bowl. (micro-wave butter to soften as needed.)
  • Using a basting brush or fingertips, rub sage butter over chicken. Pull skin off breast meat and spread sage butter there if desired. 
  • Use the rest of the sage butter on vegetables.
  • Sprinkle salt, pepper and other dried herbs over chicken.
  • Roast chicken and vegetables in 400 ° F oven for 15 minutes. 
  • Reduce oven temperature to 375 ° F, continue roasting until thermometer inserted in chicken reads 165 ° F and veggies are tender. 
  • Stir and baste once. 
  • Add Creamini mushrooms after 45 minutes cooking time. 
  • Cook for approximately an hour and 15 minutes. Check chicken for doneness right before the hour mark and plan cooking time accordingly.
  • Once chicken and vegetables are done, transfer vegetables to serving bowl, cover to keep warm. 
  • Tilt chicken allowing juices to flow from chicken, 
  • Put chicken on cutting surface. 
  • Cut chicken and serve with vegetables.
