Happy first Friday of February friends! I’ve had a very productive week, which means most days I was eating lunch on the fly and grazing my way through the afternoon until I’d cook and eat a proper dinner. Do you know those kinds of busy days where you eat a hand full of almonds here, and an apple there? I decided today I was going to treat myself to a proper lunch, so I used the leftovers from last night and made a Roasted Red Pepper BLT Wraps for a quick lunch. It was so, so good! I want to share this simple lunch idea with you and give you a chance to win some wraps too.

Use Your Leftovers!


Ingredients for BLT wrap



Making my BLT wrap today couldn’t have been easier. I grabbed leftover bacon, lettuce, tomato from last nights dinner of soup and sandwiches, added some yellow mustard on the roasted red pepper flatbread, a slice of American cheese rolled it up, sliced it in half and that’s it! You’ve got a delightfully tasty and quick lunch and you’ve used up leftovers. You can use any leftover meat/veggie combo you have on hand.

I really love the taste and texture of the roasted red pepper wrap and feel like it’s a healthy alternative to traditional sandwich breads. Each wrap has seventy calories, four grams of protein, is vegan and has only ten pronounceable ingredients! 



Another Lunch Quick idea!

When I’m craving something a little sweet and creamy for lunch and this flavor combo is so good, it just may become one of your lunch faves too. Again, this is a quick lunch to make. All you need is a wrap, a tablespoon of your favorite nut butter, a heavy teaspoon of your favorite honey and fresh strawberries.

I love strawberries, so the hardest part of making this lunch was not eating the slices and fast as I could make them. This lunch was made and served on one plate too. Just use a butter knife to slice your strawberries, I used three medium strawberries,  then use the same knife to blend the honey into the nut butter, spread it on the wrap, fold wrap in half, cut the wrap and there you go. Lunch!

Perfect for kids lunches too!


Whether your kiddos are home on a snow day, or you’re sending them to school, both of these quick lunch ideas are great for your kids lunches too. Just add extra fruit and veggies to their lunchbox and they are good to go.
