Imagine my husband’s delight when I showed him this all beef, pork cased beauty! What makes this link sausage unique is its length. Each uncooked sausage is around 44 to 48 inches long and weighs 2 pounds, which is plenty of meat for our family of four since we were serving it with brisket and all the sides: white beans, mac & cheese and sauteed yellow squash, with and without cheese. My husband smoked this sausage link for about 20 minutes, while the brisket rested. Once dinner was served my family raved about it! It's got a little kick to it from the pepper, but that just adds to its tastiness. I can see why it’s known as Elgin Hot Sausage.
