Quick & Easy Grilled Chicken Flatbread Sandwich

As the days grow longer and warmer, my idea of a perfect lunch is evolving. I’m wanting lots of fruits and veggies and a heart grained bread for a sandwich or as a side to soup just feels too heavy now that spring has officially arrived. Recently, I found the answer when I was asked if I’d like to try Atoria’s Family Bakery mini flatbread with whole grain and flax seeds. I made a quick and easy grilled chicken flatbread sandwich that was so good, I wanted to share it with you in case you are wanting a lighter lunch as well.

About Atoria’s Family Bakery:

Atoria's Bakery logo

The Atoria FamilyBakery was started in 1992 and  is located in Gilroy California. Everything they bake today was inspired by their grandmother Atoria, the original wrap artist. As a child growing up in the Assyrian villages near Mesopotamia, Atoria used to watch her mother and grandmother bake flatbread using their family recipe and a rustic hearth oven.

Unable to find similar bread in America, Atoria started making her own and it wasn’t long before a dream took shape: to bake and share her family recipe for the authentic bread of her youth with people in her new home country. And Atoria’s Family Bakery was born. Atoria and her children worked hard to make this dream a reality, and thirty years later, it’s the next generation—Atoria’s grandchildren—who are working to bring her recipes to a broader audience. This is still the bread of Atoria’s home and her youth, the bread of family and of celebrations and of happy memories.

A proud family owned and operated business, they use only quality ingredients and traditional baking methods.  They bake real bread with simple, non-GMO ingredients and never use artificial preservatives, colors, or flavors.  They don’t have time to take shortcuts and we never will.

Making a Quick & Easy Grilled Chicken Flatbread Sandwich was so easy with the help of leftover grilled chicken and Atoria’s flatbread with whole grain and flax seed wraps.

Ingredients:

Grilled Chicken Flatbread Sandwich Ingredients

¼ cup grilled chicken (leftovers or rotisserie chicken is great!)

¼ baby spinach leaves

6 Kalamata Olives

1 tablespoon of Pine Nut Hummus

1 Atoria Whole grain and flax seed wrap

Directions:

Flatbread sandwich is quick and easy to make

Since the Atoria line of baked goods need to be refrigerated after buying, layout flatbread to come up to room temperature, or microwave for 10 seconds.

Smear tablespoon of hummus over entire wrap

Add grilled chicken to center of wrap.

Add spinach leaves and olives.

Roll up wrap. Cut in half and enjoy!

More Information about Mini Lavash with Whole Grain & Flax Flatbread:

First, you may be asking yourself, what is Lavash? Lavash is a thin, soft, and pliable ancient flatbread with signature bubbles and a light dusting of flour. All of the Atoria’s products are fully baked and ready to eat. The whole grain and flax seed wraps are 50 calories per sheet with 5g net carbs and 4g of protein making them a perfect bread solution for several meal plans.

My Thoughts:

I love whole wheat breads and baked goods, so I was pleasantly surprised how much I loved the addition of flax seeds to these wraps. I had my family try one of my grilled chicken flatbread sandwiches too and they really liked them too, so I’ll keep these wraps on hand. We also agree that we want to try Atoria’s Naan bread next.
