Happy belated National Cookie Day! I hope you enjoyed baking and eating a variety of cookies yesterday, just like I did. Since we are in the beginning of the holiday baking season, I thought I’d try my hand at making some gluten-free cookies for my family and friends who need this option. While these cookies are semi-homemade; I was delighted with the way they turned out and so was my family. They couldn’t wait to try them when they got home since the heavenly scent of fresh baked treats greeted them at the door.

My daughter's don't have to eat gluten-free, but some of their friends do, so I wanted to make a cookie that could be shared anywhere other holiday cookies are. I’m so thankful I was introduced to Immaculate Baking company right in time for the holidays.


This cool company that focuses on gluten-free, organic & natural refrigerated dough products got its start in the garage of Scott Blackwell in 1995. They have come a long way since then, but they still have a southern home town feel which I love! Mainly because I’m a southern lady living life in a small southern home town and I adore baking. I decided if I’m going to bake a cookie anybody can eat and love, no matter their dietary needs, I’d better keep my recipe simple until I got to know Immaculate Baking products better.  I chose their premade Gluten-Free Chocolate Chunk cookie dough and a bag of Sea Salt Caramel baking chips.

I liked how moist and edible these cookies looked un-baked. If you’ve ever worked with premade cookie dough, you know that sometimes the dough looks and feels dry and pithy. You won’t find that here. This 3 ingredient cookie is so simple to make. Here’s what you’ll need. 



Immaculate Gluten-Free Sea Salt Caramel Chocolate Chunk Cookie Recipe:

Makes 12 medium cookies


Ingredients:




Directions: 

Preheat oven to 350 degrees.

Line cookie sheet with parchment paper.

In large mixing bowl, pull apart cookie dough.

Add Sea Salt Caramel Baking Chips.

Add Tablespoon warm water.

Fold all ingredients together until fully combined.

Now your dough is ready for you to either make drop cookies, or roll them into balls. I chose to make mine into medium size balls and they turned out the perfect size for munching!

Bake cookies for 16 minutes. Times and oven temperatures vary, so start checking them at 15 minutes. 

Let cool and enjoy!

I’m really happy with how these cookies turned out and will add them to my holiday treats every year. They are a hardy cookie, not just in taste, but in texture as well, making them perfect for ice cream sandwich cookies. They taste less sweet than normal chocolate chip cookies too, but in a good way!
